This recipe is delicious, nutritious and perfect to decorate your Christmas table. You can also have it to encourage kids to eat fruit on Christmas feast, and invite them to help you with the preparation. It’s a win win!
The Absolute Organic products you will need for this recipe are:
Ingredients
- 1 cup Absolute Organic Desiccated Coconut plus ½ cup to coat the balls
- ½ cup Absolute Organic Almond Meal
- 3 tablespoons of Absolute Organic Maple Syrup
- 2 tablespoons of Absolute Organic Coconut Oil, melted
- Water if necessary
- 300g of fresh organic large strawberries
- Drops of Absolute Organic Chocolate Chips (optional)
Instructions
- Using a medium bowl mix the ingredients together until it reaches a smooth consistency. Add a bit of water if necessary.
- Make coconut balls with the mixture with about half of the size of your strawberries, and tiny balls to make the tip of the santa hat.
- Roll the balls on the desiccated coconut and put aside.
- Clean and dry the strawberries, cut out the green leaves.
- Cut the tip of the strawberries, about ¼ from the top (this will be your hat).
- Assemble the Santa by placing the strawberry with the cut side up. Then add the bigger coconut ball on top, followed by the strawberry tip previously cut. Finish with the smaller coconut ball on top. If you’d like, you can add the santa claus eyes by using our Absolute Organic Chocolate Chips. Enjoy!
