Coconut Flour Hotcakes
Try these Organic Coconut Flour delights, top with your favourite organic berries, pumpkin seeds and chopped hazelnuts.. Yum!
Ingredients
- 1/4 cup Absolute Organic Coconut Flour
- 3 large organic eggs
- 2 tablespoons Absolute Organic Olive Oil (plus extra for cooking)
- 3 tablespoons Absolute Organic Maple Syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 pinch sea salt
Instructions
- Place all ingredients in a large mixing bowl, whisk until you’ve created a smooth batter.
- Drizzle a little of the olive oil onto a frying pan and heat.
- Using a ladle, spoon the mixture onto the hot pan and cook until lightly golden, flip and repeat…
- To serve, stack your hotcakes and load with your favourite toppings.
