Vegetarian Enchiladas
Winter warmers with a chipotle kick… Try our baked Enchilada tonight! The whole family will love them!
Ingredients
- 1 can of Absolute Organic Diced Tomatoes
- 1 can of Absolute Organic Black Beans (drained)
- 1/2 organic red onion
- 1/2 organic green capsicum
- 1 cup cooked Absolute Organic Quinoa
- 2 cloves crushed garlic
- 1 tbsp chipotle powder
- 1 tbsp smoked paprika
- 1/2 tsp salt
- 4 wraps
- 3 tbsp Absolute Organic Barbecue Sauce
- Cheese or vegan cheese (optional)
Instructions
- Pre heat your oven to 190℃
- Fry off the onion, garlic and capsicum in a pan until they start to brown
- Add in the drained black beans, cooked quinoa, diced tomatoes, herbs and spices – cook through for 4-5 minutes
- Evenly add the filling to the wraps and place them in a baking dish – ideally the dish should be small enough so that they’re all snugly supporting each other. Cover the tops with the BBQ sauce
- Bake for 20 minutes (if you’re adding cheese, remove at 15 minutes, top with cheese and return to oven for remaining 5 minutes)
- Serve and enjoy!
