Vegetarian Enchiladas

Winter warmers with a chipotle kick… Try our baked Enchilada tonight!⁠ The whole family will love them!⁠



  1. Pre heat your oven to 190⁠℃
  2. Fry off the onion, garlic and capsicum in a pan until they start to brown⁠
  3. Add in the drained black beans, cooked quinoa, diced tomatoes, herbs and spices – cook through for 4-5 minutes⁠
  4. Evenly add the filling to the wraps and place them in a baking dish – ideally the dish should be small enough so that they’re all snugly supporting each other. Cover the tops with the BBQ sauce⁠
  5. Bake for 20 minutes (if you’re adding cheese, remove at 15 minutes, top with cheese and return to oven for remaining 5 minutes)⁠
  6. Serve and enjoy!⁠
